Miles, The Prince and 123 Dough Collaborate to Brew Historic Finnish-Style Sahti Beer

Miles, The Prince brewery in White Plains has teamed up with local artisan bakery 123 Dough to craft an exciting new beer – Sahti, a traditional Finnish farmhouse ale. This unique brew is crafted with organic emmer and einkorn grains provided by 123 Dough in Pound Ridge, along with juniper berries to reflect the authentic flavors of this historic ale. The beer’s release is anticipated this October.

Sahti is a rare and ancient style of beer originating from Finland, known for its rustic brewing methods and use of wild ingredients. By partnering with 123 Dough, known for its organic and heritage grain-based breads and pizzas, Miles, The Prince has created a beer that honors tradition while embracing the farm-to-glass ethos.

According to BeerandBrewing.com traditionally Sahti seems normal with a hazy, opaque body that ranges in color from deep yellow to brown, although the head is usually minimal. On the palate, it’s sweetish, full-bodied, malty, and sometimes even quite viscous, but at the same time it’s surprisingly easy-drinking and balanced. The juniper-derived bitterness helps to balance it, as does the sharpish texture from raw (unboiled) wort. On top of that comes a fruity character from the yeast, often more than you would expect. And, like all true farmhouse ales, sahti has very little carbonation.

It is interesting to note that originally Finnish farmers dried their grains in saunas or steam houses which were wood-fired and giving the malt a slightly smoky flavor.
