Hotel Nyack, a JdV by Hyatt hotel, managed by Real Hospitality Group, is proud to announce the rebranding of its full service restaurant. Formerly known as The Grille, the newly opened restaurant is now called FARM and was reimagined with culinary guidance from NY restauranteur veteran Hugo Uys. Uys has over 20 years of experience in the NYC restaurant scene including managing two of his own successful restaurants and bars in the West Village. He is also known for developing the Great Northern Food Hall and Agern, a Michelin-starred restaurant, both in Grand Central Terminal.

“I am delighted to join the Hotel Nyack team and bring my culinary and hospitality experience to support this fantastic refresh of the restaurant,” said Uys.

FARM’s Chef Renè Xelo, who has been with the restaurant since its inception in 2016, has curated a casual dining experience influenced by the many notable purveyors from across the Hudson Valley, best known for fresh produce, sustainably sourced seafood, and delectable breads and pastries. FARM’s thoughtful culinary concept evokes the local experience of gathering together in a comfortable atmosphere to enjoy great food and drinks. The massive ceiling-to-floor windows offer diners beautiful views to the outside patio while inside, guests are surrounded by colorful artwork created by local artists from the tri-state area.

Under the direction of Chef Renè Xelo, FARM’s menu features a variety of sophisticated, yet accessible local dishes, ranging from inviting main courses to savory deserts, including a homemade tagliatelle, made with summer squash, arugula, vegan pesto, and local, roasted tomatoes, or succulent, seared tuna, perfectly seasoned with farro, seasonal vegetables, and finished with a cilantro-lime aioli.

“With the support of our ownership team, we have been able to elevate the hotel and the guest’s experience through the recent transformation of our full-service dining experience at FARM, as well as the many upgrades we have completed throughout the hotel over the past few months,” said General Manager, Matt Tobin.

The bar program will offer delightful wines, from some of the oldest vineyards in the country, as well as locally brewed bourbons and ales. Bourbon Blackberry Collins, with Black Dirt bourbon (fresh from nearby Orange County), lemon juice, and agave, is a great way to start off the evening, or try the Smoked Old Fashioned, with Hudson Rye, fresh muddled orange, sugar and bitters.

FARM will offer a bottomless brunch menu on Sundays from 11am-3pm, with items ranging from delicious blueberry pancakes to the classic Eggs Benedict. Brunch also highlights a create your own Bloody Mary bar, to complete the experience. Sitting just steps away in the hotel’s backyard is the outdoor bar and patio areas as well as the outdoor pool and jacuzzi where one can choose selections from the special poolside menu.

FARM’s menu will also be offered to guests who book the Hotel Nyack’s newly refurbished 6,500 sq. ft. private event spaces which can host both corporate meetings and social events, including weddings up to 150 guests.
